Taiwan claims 2nd in French bake off

Taiwan’s top bakers showcased their talents by finishing second at the 7th World of Bread Contest held Oct. 20-22 in Nantes, France.
The team of coach Wang Peng-chieh, head baker You Tung-yun and assistant Hsu You-cheng trailed only Japan, beating out groups from 15 other countries and territories including China, France and Italy.
Each team had to make an artistic piece, baguette, nutritious bread, viennoiserie, sandwich and homeland-inspired traditional bread within the competition’s time limit of 8 hours and 30 minutes.
One of the categories the team most enjoyed working on was its sports-themed artistic piece, Wang said, which adopted a design based on the country’s national sport—baseball. “It represents the athletic spirit of solidarity, hard work and not giving up, and it encapsulates Taiwan’s ability to shine on the global stage,” he added.
Decorated with colorful patterns used by the nation’s indigenous peoples, the finished piece measured 140-centimeters tall and weighed several kilograms.
In addition to their overall second place, the group won the prize for best sweet bread. According to You, the award was testament to their hard work replicating the flavors of Taiwan using local ingredients such as pineapple, mango and lychee.
Organized by France-based Ambassadors of Bread, the biennial World of Bread Contest is one of the premier international baking competitions for talented pastry chefs.
